A delicious and healthy lunch or side dish, you can use leftover dressing to marinate meat or perk up plain rice.

Salad
1 6 oz package baby spinach
1 cup quartered fresh strawberries
½ cup thinly sliced red onion
½ cup fresh blueberries
½ cup raw pecans
Honey Dressing
¼ cup balsamic vinegar
2 tbsp honey
½ cup olive oil

Combine the spinach, strawberries, Gorgonzola cheese, and pecans in a large bowl.

Stir the balsamic vinegar and honey together in a bowl; slowly stream the olive oil into the mixture while whisking continuously. Season with salt and pepper. Drizzle the dressing over the salad just before serving.
